Are you an ice cream lover? Do you like cookies too? Well this recipe has the best of both worlds! You shouldn't have to choose between two of your favorite things when you could have them both. Biting into these cardamom sugar cookie ice cream sandwiches is like tasting a little piece of heaven. It is that good. The warm spice of cardamom combined with the chill of the ice cream is magical. This is the type of dessert you can prepare hours or days before your next event. Your guests will be begging for more!
2 Cardamom Sugar Cookies (see recipe here)
1 small scoop of vanilla ice cream or gelato
Allow the ice cream to soften in room temperature for a few minutes. It should be soft, but not melted.
To assemble the ice cream sandwiches, scoop about 2 tablespoons of vanilla ice cream or gelato (we used Haagen-Dazs Vanilla Bean Gelato) into the flat side of one of the cookies. Top with the flat side of the second cookie and gently press until the ice cream oozes to the edge of the cookies. Place on a cookie sheet or platter and put into the freezer for 20-30 minutes to firm up. Serve when ready to eat.
