Celebrate, Remember and Fight Back: Relay for Life 2011

Relay for Life is a time to celebrate cancer survivors and life. With every relay event, the American Cancer Society is creating a world with more birthdays. It feels good to be part of that movement. That's where we got the inspiration for our booth decor and that's why we placed candles on each cupcake we sold. A world with more birthdays. That's the way it should be.

Although we spent 18 hours celebrating cancer survivors and hearing their stories about how ACS helped them through it, we couldn't help but remember why we were there in the first place. Cancer affects everyone. Whether you have or have had cancer or not, we all know someone who has or has had cancer. Alot of those people lost their battle. Relay for Life is a time to remember them.

Fight Back.
The 18 hours spent at the Curtiss Circle in Miami Springs, Florida for the Miami Springs/Virginia Gardens Relay for Life were bittersweet. It was wonderful to see a community and their elected leaders come together for such a great cause. On the other hand, it is sad that such a horrible diagnosis is what brought everyone there together in the first place. In total, over $80,000 was raised for the ACS at this year's event.

Torches and luminaries were lit in honor of cancer surviors and in memory of those who lost their battle to cancer.

After countless hours of baking and decorating in order to raise funds for the American Cancer Society, we are proud to announce that we met our goal of $2,500. "Green Velvet" St. Patrick's Day Cupcakes

Happy St. Patrick's Day! Look what the leprechaun dropped off at our house! Green velvet cupcakes instead of red velvet! He used the same red velvet recipe but substituted the red food coloring with green. Guess what? You can too! Try this easy tip for your St. Patrick's Day dessert. It's okay to get a little crazy with the green food coloring!

Arugula and Ricotta Flatbread Pizza

A healthy twist on pizza, this flatbread pizza dish will become a dinner stable in your home! Peppery arugula and creamy ricotta steal the show and make this easy recipe an instant, sophisticated meal.

Flatbread (store-bought)
Olive oil
A few cloves of garlic
1 small red onion
1/2 cup of arugula per flatbread
4 teaspoons of ricotta cheese per flatbread
1/4 cup of mozzarella cheese per flatbread

Kitchen Essentials:
Kitchen brush
Garlic press
Cutting board
Baking sheet
Aluminium foil
Pizza cutter

Preheat the oven to 350 degrees F. Rinse the arugula and pat dry. Next, chop the arugula, onions and garlic.

Remove the flatbread from the package and place on a baking sheet lined with aluminium foil. Drizzle the bread with a little bit of olive oil and brush making sure the entire flatbread is covered. Sprinkle with salt and pepper. Next, add the chopped onions and garlic and spread with a spoon. Top with mozzarella cheese and pieces of arugula. With a spoon, place small mountains of ricotta cheese over the flatbread pizza. Drizzle some olive oil over the pizza. Bake in the oven for 15-20 minutes until the cheese has melted and the edges are golden brown. After the pizza comes out of the oven, top with a few leaves of arugula for garnish.

Fool-Proof Ham and Feta Cheese Frittata

Frittata. It's the Italian man's omelet. Perfect for breakfast, brunch or lunch. Frittatas are healthy, filling and easy to make. Once you learn the technique, you can basically use ingredients you have on hand to make a delicious meal. Leftovers are great for dinner too!
8 eggs
1/4 cup of milk
1/2 cup of diced cooked ham from the deli
1/4 cup of crumbled feta cheese, plus 1 tablespoon for garnish
1 tablespoon of chopped thyme
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/2 tablespoon of butter
Handful of chopped parsley for garnish
Kitchen Essentials:
10'' nonstick pan
Oven mitts
Mixing bowl
Measuring cups and spoons
Cutting board
Butter knife
Spatula or wooden spoon
Serving platter
Preheat the oven to 350 degrees F. Chop the ham into small 1/2 inch cubes. Chop the herbs.
Crack and whisk the eggs in a bowl for 30 seconds to incorporate air, which results in a fluffier frittata. Add the milk, thyme, ham, feta cheese, salt and pepper into the eggs.
Heat the butter in a non-stick pan over medium heat. Swirl the pan around to fully coat with butter. Pour the mixture into the pan. Scrap the mixture out of the bowl with a spatula and evenly distribute the ham and cheese throughout the pan. Allow the frittata to cook for the next 5-7 minutes. Resist the urge to mix, whisk, scramble, or stir. Watch as the edges of the frittata bubble and brown and listen the hissing sound of the air bubbles.
Once you can lift the edge of the frittata with a butter knife, place the pan in the middle rack of the oven. Cook for an additional 15-20 minutes. Don't forget to use your oven mitts to take the pan out of the oven! The handle will be extremely hot!
Garnish you golden beauty with fresh parsley and feta cheese crumbles. Slice and share the wealth of a healthy balanced meal with family and friends.
