Although you can prepare these appetizers two days ahead, they are served best straight out of the oven! The crispier, the better! We made these for the Univision production crew the day they came to our house for the "Delicioso" shoot. They thought they were exactly that...delicioso! If the culinary experts liked them, so will you!
1 box of puff pastry (found in the frozen section of Publix)
1 can of artichokes
1 box of frozen spinach
2 tablespoons of butter
1 package of mozzarella cheese
1/2 cup of crumbled feta cheese
The night before or a few hours before preparing: Defrost the frozen spinach completely and drain all of the water by squeezing the thawed spinach between two sheets of paper towel. There will be a lot of water!
20-30 minutes before preparing: Open the puff pastry box and take out one of the packages of dough. There are two, but you will only need one. Open the wrapper and place the frozen puff pastry on a wooden cutting board. Allow the puff pastry to defrost for a few minutes. The puff pastry must be cold, but not frozen, to assemble.
10 minutes before preparing: Pre-heat the oven to 350 degrees.
Unroll the pastry sheet. Melt the butter in the microwave and brush on the pastry. Sprinkle an even layer of mozzarella cheese over the pastry dough. Top with an even layer of spinach and artichoke. (I like to rough chop the artichoke before placing on the pastry.) Begin to carefully roll up the pastry dough. You can wrap it in plastic wrap and store in the refrigerator for up to two days before. If you are going to serve it right away, cut the log into ¼ inch pieces. If they fall apart, just put it back together, once they bake you won’t be able to tell they are not perfect. Place on a cookie sheet sprayed with cooking spray about an inch apart. Bake for about 20 minutes until they are golden brown. Sprinkle feta cheese over the top when they come out of the oven. Place on a platter and share with friends.
